Broccoli is ready to be harvested when the central head is compact, deep green and fully developed. When yellow flowers begin to bloom, then the broccoli is over-mature. Harvest in the early morning with a sharp knife, cutting the head with 5-6 inches of stem. Frequent harvesting makes the plant give smaller side shoots, which prolongs the harvesting season.
